Marinade:
- 4.5 lbs pork shoulder, cut thin against the grain
- 4 Tbsp finely chopped cilantro stems
- 7 large garlic cloves, peeled
- 1 Tbsp white peppercorns
- 2/3 cup palm/brown sugar
- 3 Tbsp fish sauce
- 2 Tbsp soy sauce
- 2 Tbsp oyster sauce
Braise with ~3/4 cup coconut milk
Adapt for meatballs, also with coconut milk braise when finishing on broil:
- 1+ lb ground pork
- 2 Tbsp minced cilantro stems
- 4 minced garlic cloves
- 1 tsp ground pepper
- 1 Tbsp brown sugar
- 1 Tbsp fish sauce
- 1 Tbsp soy sauce
- 1 Tbsp oyster sauce
