Thai Pork Skewers (Moo Ping)

Marinade:

  • 4.5 lbs pork shoulder, cut thin against the grain
  • 4 Tbsp finely chopped cilantro stems
  • 7 large garlic cloves, peeled
  • 1 Tbsp white peppercorns
  • 2/3 cup palm/brown sugar
  • 3 Tbsp fish sauce
  • 2 Tbsp soy sauce
  • 2 Tbsp oyster sauce

Braise with ~3/4 cup coconut milk

Adapt for meatballs, also with coconut milk braise when finishing on broil:

  • 1+ lb ground pork
  • 2 Tbsp minced cilantro stems
  • 4 minced garlic cloves
  • 1 tsp ground pepper
  • 1 Tbsp brown sugar
  • 1 Tbsp fish sauce
  • 1 Tbsp soy sauce
  • 1 Tbsp oyster sauce
