Cambodian Lemongrass Beef Skewers

Marinade:

  • 2 cloves garlic
  • 2 lemongrass stalks
  • 1 Tbsp coriander seeds
  • 2 Tbsp brown sugar
  • 1/4 cup fish sauce
  • 2 lb beef, sliced thin, marinated up to 24hr

Sauce:

  • 1 Tbsp peanut oil
  • 2 minced garlic cloves
  • 2 tsp chili paste
  • 2 Tbsp tomato paste
  • 1/2 cup chicken broth
  • 1/2 teaspoon sugar
  • 1 Tbsp peanut butter
  • 1/4 cup hoisin sauce
  • 1/4 cup roasted ground peanuts for garnish
  • 1 fresh red chili, seeded and thinly sliced for garnish

Extra garnish:

  • mint
  • cilantro

Procedure:

  1. caramelize garlic & add tomato/chile pastes, sugar
  2. add hoisin, peanut butter, stock, cook 3m
  3. garnish sauce w/ peanuts & chili
