Beef Chili

  • Olive oil
  • 2 large red onions, chopped
  • 5 Tbsp chopped jalapeño chilies
  • 8 chopped garlic cloves
  • 2 1/2 pounds ground beef
  • 1/4 cup chili powder
  • 2 Tbsp cumin
  • 1 tsp paprika
  • 1 28-ounce can tomatoes (optionally diced)
  • 2-3 15-oz cans beans, drained
  • 1 14-oz can beef broth
Optional garnish:
  • Sour cream
  • Cheddar cheese
  • Scallions
  • Fresh cilantro
  1. Cook onions in oil, ~6m
  2. Add chilis and garlic, ~1m
  3. Add beef and cook until brown, ~5m
  4. Add chili powder, cumin, and paprika
  5. Add broth and tomatoes, breaking with back of spoon
  6. Bring to boil, then lower heat
  7. Add beans
