- Olive oil
- 2 large red onions, chopped
- 5 Tbsp chopped jalapeño chilies
- 8 chopped garlic cloves
- 2 1/2 pounds ground beef
- 1/4 cup chili powder
- 2 Tbsp cumin
- 1 tsp paprika
- 1 28-ounce can tomatoes (optionally diced)
- 2-3 15-oz cans beans, drained
- 1 14-oz can beef broth
Optional garnish:
- Sour cream
- Cheddar cheese
- Scallions
- Fresh cilantro
- Cook onions in oil, ~6m
- Add chilis and garlic, ~1m
- Add beef and cook until brown, ~5m
- Add chili powder, cumin, and paprika
- Add broth and tomatoes, breaking with back of spoon
- Bring to boil, then lower heat
- Add beans
