Whole Wheat Banana Blueberry Muffins

  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 3/4 cup packed brown sugar
  • 1 tsp vanilla extract
  • 3 mashed bananas
  • 2 cups whole wheat pastry flour
  • 1 tsp baking soda
  • 1 Tbsp ground cinnamon
  • 1 cup frozen blueberries
  1. Preheat oven 375°
  2. Grease or line with paper liners: 12 large muffin cups or 24 small muffin cups.
  3. In a large bowl, whisk together the eggs, applesauce, oil, brown sugar, vanilla and bananas.
  4. Combine the flour, baking soda, and cinnamon.
  5. Stir into the banana mixture until moistened.
  6. Stir in the blueberries until evenly distributed.
  7. Spoon batter into muffin tins.
  8. Bake for 20 minutes or until the tops of the muffins spring back when pressed lightly. Don't overcook or else they will be too dry.
  9. Cool before removing from tins.
