Æbleskiver

Requires special pan by the same name, shown here.
  • 3 1/2 cups flour
  • 3-4 eggs, whites separated
  • 1 tsp. baking powder
  • lemon zest
  • 1 quart buttermilk
  • ground cardamom, to taste
  • powdered sugar
  • jam
  1. Whisk egg whites until stiff
  2. Lightly mix other ingredients
  3. Gently fold in whites
  4. Heat pan, then add butter to each of the pan's holes
  5. Fill each hole with batter, first the one in the middle if you're using gas, then the six on the outside
  6. Using a sharp pointed object (knitting needle or bent paper clip), skew each thingie so that the batter pours outward
  7. Continue skewing and rolling them until spheres are sealed and hollow
  8. Serve immediately and dust with powdered sugar. Goes with jam
