Spicy Thai Basil Pork

  • 2 Tbsp peanut oil
  • 6 clove garlic, thinly sliced
  • 4 thai chile peppers, thinly sliced
  • 1-2 lb pork, sliced .25"
  • 2 Tbsp shaoxing cooking wine
  • 2 Tbsp oyster sauce
  • 2 Tbsp soy sauce
  • 1/2 tsp ground pepper
  • 2 tsp sugar
  • 2 cups basil
  1. Heat oil in wok, then stir-fry garlic and chili peppers for 30 seconds, covered so you don't end up in the hospital.
  2. Add pork and stir fry, covered, stirring occasionally for ~2m.
  3. stir in pepper, wine, soy sauce and oyster sauce, then stir uncovered until pork is cooked, ~1m.
  4. Add sugar and basil, and cook until leaves are wilted.
